Country Tortilla Soup


Country Tortilla Soup

1 tsp oil

1 chopped onion

3 minced cloves garlic

1 minced jalapeno (remove seeds for less spice is desired)

1 tsp ground cumin 

3/4 tsp dried oregano

5 tbs finely chopped fresh cilantro leaves

4 cups chicken broth 

2 (14.5-ounce) cans diced tomatoes. with juice

1/4 cup lime juice

2 to 3 medium sized boneless, skinless chicken breast

1 pinch of salt, 2 pinches of pepper


1.)  Boil two to three thawed chicken breasts in large pot.  Add a pinch of salt to the water and bring water to a gentle roll, not boil.  Leave chicken in the light boil for roughly 20 minutes or until breasts are fully cooked.

 2.)  Take a skillet and heat up the teaspoon of oil then toss in the diced onions. let simmer for five minutes. Stir in the diced jalapeno, garlic, cumin, and oregano. Pour in the chicken broth, tomatoes, and lime juice, bring the contents to a boil. Turn down heat and simmer on low for 10 minutes. 

 3.)  While skillet is simmering, remove the cooked chicken breasts, let cool briefly, and then strip the meat into thin small strips with a fork. Mix in the remaining pinches of salt and pepper into the batch and let sit until needed.

 4.)  Once the skillet has simmered for the appropriate time, move the contents to a blender and puree for thirty to 45 seconds. 

 5.)  Transfer the blended soup into a large pot and add the stripped chicken breasts.  Simmer on low heat for fifteen or twenty minutes, allowing the chicken to absorb the flavors of the soup.

 6.)  Ladle soup into bowls and garnish with whatever you can dream up.  Enjoy.
