Seared Salmon & Beets


Seared Salmon with Red Lentil & Beet Chutney, Seared Cauliflower & Candy Stripped Beets


(Serves 4 people)

-24oz king salmon portioned into 4, 6oz portions

-2 cups uncooked red lentils

-1 yellow onion (julienned)

-5 red beets  (diced)

-1/2 cup granulated sugar

-2 tbsp apple cider vinegar

-3 candy stripped beets sliced thinly on a mandaline

-3 small heads of tri-colored cauliflower





-Chicken stock

-Salt and pepper to taste

-Water as needed


1) Cook the lentils in a small pot covered with water and 2 tbsp of butter.  Let slowly simmer until al dente (don't worry about under-cooking them because they'll be cooked longer when you're ready to plate). 

2) In another pot, add 3 tbsp of butter, the yellow onions and caramelize until they're light golden. Add in red diced beets and sweat down for 4 minutes. Next, add in your sugar, vinegar, and water and let simmer till it turns from a matte color to a shiny, glossed appearance (almost syrupy). When the lentils are cooked, strain and combine them with the beet chutney and fold together. Stir softly, set aside and keep warm.  

3) Add 2 tbsp butter in a saute pan and let brown. Throw in your cauliflower and let brown at medium-high heat for about 3 minutes. When they have a golden sear to them, add in garlic shallots and thyme. Saute another minute and deglaze the pan with a few ounces of stock. Let that reduce down to a sauce and season to taste.  

4) While that is reducing on a med-high heat, sear the salmon side till browned, flip over and place in a 400 degree oven. Bake the fish for about 4 minutes to provide a medium-rare center, remove & rest on a paper towel while you build the plate.


To plate:

Spoon a full serving of the lentil chutney and center in the plate.  Next, create two small sections of cauliflower on opposite ends of the chutney and drizzle the sauce around in a circular fashion.  Next, add your salmon across the chutney and between the cauliflower. Garnish with a few pieces of the raw candy stripped beets. 

It's a perfect meal to serve on date night with a bottle of 2010 Treana wine.
