Calabrian Chili Vinaigrette

 

250 grams Calabrian Chilies, chopped fine

50 grams Calabrian Chilies, oil

20 grams  Ginger, microplaned

200 grams  White Balsamic Vinegar

10 grams garlic, microplaned

20 grams Anchovy, chopped fine

10 grams Anchovy oil

80 grams of fish sauce, (Three Crabs Brand)

20 grams of whole grain mustard

 

- Combine all!

- Finish off with tons of fresh(ly) cracked black pepper!

- Holds for weeks!

"At the restaurant, we serve it over a generously-sliced piece of raw wild-caught big eye tuna, and it's topped with pita-bread crumbs. The vinaigrette is quite versatile and can be applied to roasted meats, fish, and vegetables."
