Truffle Cauliflower Gratin

-4T Butter

-1/4 C Flour

-2 Heads Cauliflower (Cored & Cut into small pieces)

-2C  Milk

-1C Manchego Cheese (grated)

-1T White Truffle Oil

-1C Bread Crumbs

-2 cloves Garlic (chopped)

 

Directions

Preheat oven to 375 degrees. Butter or spray a shallow 2(ish) quart baking dish. Spread chopped cauliflower even in baking dish. Throw the pan (gently) in the oven & let the cauliflower start roasting. In the meantime, melt the butter in a saute pan. Add the garlic and saute until soft. Add the truffle oil & then the flour stir the flow until it is paste-like. Add the milk, about 1/2 cup at a tim, and mix thoroughly to prevent lumps. Let the sauce simmer for 5 or so minutes. Add salt & pepper to taste here. Add the manchego cheese and pour it on top of the cauliflower. Sprinkle the bread crumbs on top & bake another 20 minutes.
